The difference between specialty and commercial coffee is not only price. The quality of the raw material, selection, traceability, process, roasting and freshness all shape the final experience.

Raw material and selection

Coffee worked with a greater focus on quality aims to control defects and preserve the characteristics of the bean and its origin. That means more selection work, and discarding what does not meet the mark.

Traceability

Knowing where the coffee comes from and how it was produced helps you understand what is behind the cup. It is not a decorative detail: it is what allows a result to be repeated and corrected when something changes.

Roasting and freshness

Roasting should aim for a result coherent with the coffee and with the profile you want to offer. Freshness and storage matter just as much: a well-selected coffee stored badly ends up being a mediocre coffee.

Commercial coffee

Broadly speaking, commercial coffee tends to prioritise volume, uniformity and price. Those are legitimate goals and answer a real market need.

A higher-quality coffee can devote more attention to selection, origin, process and sensory experience.

It is not that one is right and the other wrong. It is about knowing what you are buying and what you want it for.
