Benefits of freshly roasted coffee

Coffee is a fresh product. From the moment it leaves the roaster it starts losing aroma and flavour, and what you drink at home depends a lot on how much time has passed. These are the differences you notice.

More aroma in every cup

Coffee aroma comes from hundreds of volatile compounds formed during roasting that escape over the days. A freshly roasted coffee keeps nearly all of them; one that sat for months on a shelf lost a good part before it was opened.

A sweeter, more characterful flavour

The notes that set a specialty coffee apart, such as caramel, chocolate or fruit, are the first to fade. Fresh, the coffee shows the profile of its origin and roast, not a flat, generic taste.

Less bitterness and no stale taste

The bean's natural oils oxidize with air and time, which shows up as harsh bitterness and a stale taste. With freshly roasted coffee the cup is cleaner and does not need to be covered up with sugar.

Better espresso crema and a better bloom

After roasting the bean holds carbon dioxide and releases it gradually. That gas forms espresso crema and makes the coffee bloom when you pour water over it. Old coffee barely reacts.

It keeps its natural antioxidants

Coffee is one of the most common sources of antioxidants in the diet, mainly its chlorogenic acids. Those compounds break down with exposure to oxygen, light and heat, so a fresh, well stored coffee reaches the cup with more of them.

You know where it comes from and when it was roasted

Buying from the roaster means knowing the origin, altitude, process and batch of each bag. Commercial coffee usually carries only a distant expiry date, which says nothing about when it was roasted.

Your brewing performs better

With fresh coffee your recipe behaves the same day after day, so it is easier to find the grind, dose and time you like, whether you use a pour over, French press, V60 or espresso.

It supports Costa Rican growers

An origin roaster works directly with the farms. Our coffee comes from Naranjo and Zarcero and more than 30 local farmers, and it is roasted in Costa Rica instead of traveling already roasted from another country.

A test you can do at home

The bloom: what freshness looks like

After roasting the bean holds carbon dioxide and releases it over the days. When hot water hits fresh coffee, that gas rushes out: the coffee bed swells and bubbles. Coffee that is months old has already lost it and barely reacts.

That same gas is what forms espresso crema.

When to drink it and how long it stays fresh

Before you buy

How to tell if coffee is freshly roasted

  1. 1The bag says when it was roasted or carries the roast batch number, not just when it expires.
  2. 2It has a one way degassing valve: the small circle that lets gas out without letting air in.
  3. 3When you open it, the aroma is immediate and fills the kitchen.
  4. 4When hot water hits it in a pour over, the coffee swells and bubbles for a few seconds.
  5. 5The beans look even, with a natural sheen for their roast, and do not smell musty.

At home

How to store freshly roasted coffee

  • Keep it in its valve bag tightly closed or in an opaque, airtight container.
  • In a cool, dry place, away from light, stove heat and humidity.
  • Do not put it in the fridge: moisture and other food smells ruin it.
  • If you can, buy whole bean and grind right before brewing.
  • Buy the amount you drink in two to four weeks.

Where can I buy freshly roasted specialty coffee in Costa Rica?

What is specialty coffee?

It is high quality arabica coffee with a known origin, carefully grown and processed and free of defects in the cup. It is judged by aroma, acidity, body and flavour, and shows notes that come from its origin and roast.

How long does freshly roasted coffee stay fresh?

As a guide, its peak flavour runs from a few days after roasting to 4 to 6 weeks, if kept tightly closed and away from light and heat. Ground coffee loses aroma much faster: drink it within one to two weeks of opening.

Is it better to buy whole bean or ground coffee?

Whole bean keeps its aroma better because less surface is exposed to air. If you do not have a grinder, order it ground for your brewing method and buy smaller amounts.

Why not brew coffee the same day it is roasted?

Straight out of the roaster the bean still releases a lot of gas, which makes extraction unstable, especially for espresso. A few days of rest settle it and the flavour comes through better.
