How to choose the right coffee for your taste

There is no single perfect coffee for everyone. What does exist is a way to get close to yours: understanding how roast level, bean process and brewing method work together.

Those three factors explain most of what you taste. Change one and the drink changes, even with the same coffee.

Start with the roast

Roast sets the intensity. In our line, Deleite is the light roast, made for those who enjoy a more delicate cup. Sunrise, Honey, Natural and House Blend are medium roasts, each with its own character. Europeo and the Economy Line are dark roasts, for those looking for something bolder.

If you do not know where to begin, start in the middle. A medium roast shows the character of the bean without intensity swallowing the detail, and it is the easiest ground for comparing.

Then the process

The process is what happens to the fruit after harvest, and it leaves a mark. A washed coffee tends to read cleaner and more defined. A honey usually brings more sweetness and body. A natural can show a more obvious fruit character.

It is not that one is better: they are different roads to different cups. It is worth brewing all three with the same recipe to notice how they differ.

And finally, the method

The same coffee brewed in a V60 and in a French press does not taste the same. Paper holds back oils and gives a cleaner cup; the press lets them through and gives more body. Espresso concentrates everything into very little liquid.

These recipes are starting points. Adjust them to your grinder, your equipment, your local water and your taste.

A practical way to decide

Pick a method you already own, order the coffee ground for that method, and brew it two or three times with the same recipe before changing anything. Only then move one variable at a time.

Changing everything at once is the fastest way to learn nothing.
